2 – 14.5 oz cans of diced tomatoes

3 cups of chicken broth

1 and 1/2 pound diced cooked chicken

2 tsp chili powder

1 package of reds bean and rice

Shredded Monterrey Cheese

Jalapenos to taste

Tortilla chips

Sour cream for garnish

Avocados for garnish

Lime Juice to Taste

Combine first two ingredients in saucepan; bring to a boil and then add the chicken seasoned with the chili powder. Reduce heat and cook 7 minutes. Prepare beans and rice and add to mixture. Heat through. Spoon in bowls and top with cheese. Serve with chips
