1 lb of smoked sausage, cut into bit-sized pieces

1 tbsp extra virgin olive oil

1 sweet onion, chopped

4 carrots, peeled and chopped

2 celery stalks, chopped

2 tsp dried basil

2 tsp dried oregano

1 pinch of crushed red pepper flakes

4 cloves garlic, minced

2 cups dried lentils

1 – 28 oz can crushed tomatoes

6 cups of reduced-sodium chicken stock or broth

1 bay leaf

1 cup freshly grated Parmesan, plus more for serving

Juice of 1/4 lemon, or to taste

Kosher salt and pepper to taste

Crusty bread, for serving

Brown the sausage and onion with virgin olive oil in skillet. Add all the other ingredients in a pot (all except the Parmesan)  Add the sausage and onion mixture to the pot once it has been browned.  Bring it to a boil.  Then put your stove on low and simmer for 1 hr. Serve in bowls; then add the Parmesan.
